  • It's not often you come across a white pinot noir, which is why we strive to make our wine with a delicate touch to allow the unique properties of this red grape to come through as a white wine. We hand-pick our pinot noir grapes typically about a week earlier than when we pick for our red wines to preserve acidity. Then they are whole bunched pressed very gently which allows us to minimize maceration and have little color pick-up. All of the color and most of the tannin in red wine comes from the skin so if you press right away and press lightly you can¬†extract the clear juice, creating a beautifully light-in-color white wine with red wine characteristics. Finally, we allow it to settle out in a tank overnight and then it is clean racked to ferment in stainless steel at a low temperature to retain aromatics. Like our white wines, it‚Äôs sur lee aged and bottled in the spring. 100% Pinot Noir.

  • Named after an old estate located in the heart of Domaine Lafage, Mas Miraflors, the Miraflors Rosé is sourced from old vines of Grenache Gris and Noir, some nearing 80 years old, planted near the Mediterranean. Added to this is some Mourvedre that Jean-Marc planted here about 15 years ago. This a direct press rosé with the color coming from the skins of the pink Grenache Gris berries, and naturally, from the much darker Mourvedre and Grenache Noir. It is aged in tank for 4 months before bottling. Decanter 91 pts.

  • Elicio Grenache-Syrah Rosé is sourced from vineyard plots adjoining the village of Tour d’Aigues, south of the Luberon Massif. The hillside vines benefit from the lively air currents, cooling the grapes during the balmy summer nights. There’s next to no intervention in the winery, which preservers the delicate fruit aromas and vivid freshness. The beautiful salmon color leads to a nose packed with fresh red raspberry notes and a dry, crisp palate of strawberry and raspberry.
  • Pinot Noir fruit for this Ros? is hand-harvested very ripe and gently whole bunch pressed with limited skin crushing, which makes virtually a "white Pinot Noir." The wine is fermented cool in stainless steel tanks. Then carefully selected lots of fermented red Pinot Noir juice is blended back for color and texture. Elk Cove Pinot Noir Ros? is finished completely dry.
